Turkish Pasta is a delicious and hearty dish made with a savory tomato sauce, spices, and topped with a blend of aromatic herbs and cheese.

Ingredients
  

For the Base
  • 2 cups pasta any short pasta like penne or fusilli
  • 1 tablespoon olive oil
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 can crushed tomatoes about 400g
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon cumin
  • 1 teaspoon red pepper flakes adjust to taste
For the Topping
  • 1 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh mint chopped

Method
 

Preparing the Pasta
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
  2. Drain the pasta and set aside, reserving a little pasta water.
Making the Sauce
  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the crushed tomatoes, tomato paste, oregano, cumin, red pepper flakes, salt, and black pepper. Simmer for about 10-15 minutes, allowing the flavors to meld.
Combining
  1. Add the cooked pasta to the sauce, tossing to combine. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.
Serving
  1. Transfer the pasta to serving plates. Top with crumbled feta cheese, chopped parsley, and mint.
  2. Serve warm and enjoy your Turkish Pasta!

Notes
