Whole Chicken Orzo Soup

Ingredients
  

For the Base
  • 1 whole chicken about 3-4 lbs
  • 8 cups chicken broth low sodium preferred
  • 1 cup carrots diced
  • 1 cup celery diced
  • 1 cup onion diced
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 cups orzo pasta
For the Garnish
  • 1/4 cup fresh parsley chopped

Method
 

Prepare the Chicken
  1. In a large pot, add the whole chicken and cover with chicken broth.
  2. Bring the broth to a boil over medium-high heat, then reduce heat to low and cover. Simmer for 45 minutes.
Cook the Vegetables
  1. In a separate pan, sauté the diced carrots, celery, and onion over medium heat for about 5-7 minutes until softened.
  2. Add minced garlic, thyme, and oregano, cooking for an additional 2 minutes until fragrant.
Combine and Cook the Soup
  1. Once the chicken is cooked, carefully remove it from the pot and set it aside to cool slightly.
  2. Add the sautéed vegetables and orzo to the broth. Stir well and bring to a boil.
  3. Reduce heat to low and simmer for an additional 10 minutes until the orzo is cooked.
Shred the Chicken
  1. While the orzo is cooking, shred the chicken into bite-sized pieces, discarding the skin and bones.
  2. Return the shredded chicken to the pot and stir to combine.
Serve the Soup
  1. Ladle the soup into bowls and garnish with fresh parsley and lemon slices.
  2. Serve hot and enjoy your comforting bowl of whole chicken orzo soup!
