White Bean Chicken Chili

Ingredients
  

For the Base
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 2 cans white beans drained and rinsed
  • 1 cup chicken broth
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Topping
  • 1 cup shredded cheese cheddar or Monterey Jack
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro

Method
 

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, cumin, chili powder, oregano, salt, and black pepper. Stir for about 1 minute until fragrant.
  3. Add the chicken pieces to the pot and cook until no longer pink, about 5-7 minutes.
  4. Pour in the chicken broth and bring the mixture to a simmer.
  5. Add the white beans and continue to simmer for an additional 15 minutes to allow the flavors to meld.
  6. Taste and adjust seasoning if necessary.
  7. Serve hot, topped with shredded cheese, sour cream, and chopped cilantro.

Notes

You can substitute cooked rotisserie chicken for a quicker option. This chili can also be made in a slow cooker by adding all ingredients and cooking on low for 6-8 hours.
