  • 1 medium celery stalk finely chopped
  • 1 cup mushrooms finely chopped

  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 cup vegetable broth
For the Pasta
  • 12 ounces spaghetti or pasta of choice
  • 1 tablespoon salt for pasta water
For Garnish
  • 1/4 cup fresh basil chopped
  • 1/4 cup nutritional yeast optional for cheese flavor

Method

Prepare the Bolognese Sauce
  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion, garlic, carrot, and celery. Sauté for 5-7 minutes until softened.
  3. Stir in chopped mushrooms and cook for another 5 minutes until they release moisture.
  4. Add crushed tomatoes, tomato paste, dried oregano, dried basil, salt, and pepper. Stir well to combine.
  5. Pour in vegetable broth and bring the mixture to a simmer. Reduce heat and let it cook for 15-20 minutes, stirring occasionally.
Cook the Pasta
  1. While the sauce is simmering, bring a large pot of salted water to a boil.
  2. Add spaghetti and cook according to package instructions until al dente.
  3. Reserve 1/2 cup of pasta water, then drain the pasta.
Combine and Serve
  1. Add the drained pasta to the Bolognese sauce. Toss to combine, adding reserved pasta water as needed to loosen the sauce.
  2. Serve immediately, garnished with fresh basil and nutritional yeast if desired.
