Ingredients
  

For the Pasta
  • 12 ounces spaghetti
  • 1 tablespoon salt for pasta water
For the Sauce
  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • 1 can diced tomatoes 14.5 ounces
  • 5 ounces fresh spinach
  • 1 pound shrimp peeled and deveined
  • 1 teaspoon red pepper flakes optional for spice
  • 1 teaspoon dried oregano
For Garnish
  • 1/4 cup parmesan cheese grated
  • 1 tablespoon fresh basil chopped

Method
 

Cooking the Pasta
  1. Bring a large pot of salted water to a boil.
  2. Add spaghetti and cook according to package instructions until al dente.
  3. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.
Making the Sauce
  1. In a large skillet, heat olive oil over medium heat.
  2. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in diced tomatoes, oregano, and red pepper flakes. Simmer for 5 minutes.
  4. Add shrimp and cook until they turn pink, about 3-4 minutes.
  5. Stir in fresh spinach and cook until wilted, about 2 minutes.
Combining
  1. Add the cooked spaghetti to the skillet and toss to combine.
  2. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
Serving
  1. Plate the pasta and top with grated parmesan and chopped basil.
  2. Serve immediately and enjoy!
