Ingredients
  

For the Base
  • 4 slices sourdough bread or your preferred bread
  • 2 tablespoons olive oil for drizzling
For the Topping
  • 2 cups cherry tomatoes halved
  • 1 cup fresh mozzarella cubed or sliced
  • 1/4 cup fresh basil torn into pieces
  • 1 teaspoon balsamic vinegar optional for drizzling

  • to taste black pepper

Method
 

Prepare the Base
  1. Preheat your oven or toaster oven to 400°F (200°C).
  2. Place the slices of sourdough bread on a baking sheet and drizzle with olive oil on both sides.
Toast the Bread
  1. Toast the bread in the oven for about 5 minutes, or until golden and crispy.
Prepare the Topping
  1. In a bowl, combine the halved cherry tomatoes, mozzarella, torn basil, salt, and black pepper.
  2. Drizzle the mixture with balsamic vinegar if desired and toss gently to combine.
Assemble the Toast
  1. Once the bread is toasted, remove it from the oven and top each slice with the tomato and mozzarella mixture.
