Prepare the Base
- Heat the olive oil in a large skillet over medium heat.
- Add the diced sweet potatoes and cook for about 10 minutes, stirring occasionally, until they start to soften.
- Add the diced onion and bell pepper to the skillet, and continue cooking for another 10-15 minutes until the vegetables are tender and slightly caramelized.
- Season with salt and black pepper to taste, and stir well to combine.
Cook the Eggs
- While the sweet potatoes are cooking, prepare the eggs to your liking (fried or poached).
- Once the eggs are done, set them aside.
Serve
- Spoon the sweet potato hash onto plates.
- Top each serving with a fried or poached egg.
- Garnish with chopped fresh cilantro.
