  • 4 boneless skinless chicken breasts chicken breasts about 1.5 pounds
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Onion Sauce
  • 3 medium yellow onions sliced
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch mixed with 2 tablespoons of water to create a slurry
  • 1 teaspoon thyme dried

Method
 

Cooking the Chicken
  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Season the chicken breasts with salt and pepper, then add them to the skillet.
  3. Cook the chicken for about 6-7 minutes on each side or until golden brown and cooked through. Remove from skillet and set aside.
Making the Onion Sauce
  1. In the same skillet, add the sliced onions and cook for about 5 minutes until they begin to soften.
  2. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Pour in the chicken broth and soy sauce, stirring to combine.
  4. Bring the mixture to a simmer, then add the thyme.
  5. Stir in the cornstarch slurry and cook for another 2-3 minutes until the sauce thickens.
Combining Everything
  1. Return the cooked chicken breasts to the skillet, spooning the onion sauce over them.
  2. Simmer for an additional 2-3 minutes to heat through and meld flavors.
