  • 1 pound Italian sausage sliced
  • 3 cups potatoes cubed
  • 2 tablespoons olive oil for cooking
For the Vegetables
  • 1 cup bell peppers sliced
  • 1 medium onion sliced
  • 3 cloves garlic minced
For Seasoning
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat the olive oil over medium-high heat. Add the sliced sausage and cook until browned, about 5-7 minutes.
  3. Add the cubed potatoes to the skillet and stir to combine with the sausage. Cook for another 10 minutes, stirring occasionally.
  4. Stir in the sliced bell peppers, onion, and minced garlic. Season with Italian seasoning, salt, and black pepper.
  5. Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the potatoes are tender and golden brown.
  6. Remove from the oven and let cool for a few minutes before serving.
  7. Serve hot and enjoy your delicious sausage, potatoes, and peppers!
