Method
Cook the Pasta
- Bring a large pot of salted water to a boil.
- Add the rotini pasta and cook according to package instructions until al dente, about 8-10 minutes.
- Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
Prepare the Sauce
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and sauté for about 1 minute until fragrant.
- Stir in the halved cherry tomatoes and cook for 5 minutes until they begin to soften.
- Add the spinach and basil, cooking until the spinach wilts, about 2 minutes.
Combine and Serve
- Add the cooked rotini to the skillet with the sauce, tossing to combine.
- If the mixture seems dry, add reserved pasta water a little at a time until desired consistency is reached.
- Season with black pepper and adjust salt if necessary.
- Serve hot, topped with grated parmesan and toasted pine nuts.
