  • 1 cup cream cheese softened

  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
For the Filling
  • 1 cup fresh raspberries
  • 1 cup white chocolate chips

Method
 

Prepare the Cookie Base
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, cream cheese, and sugar until smooth.
  3. Add the egg and vanilla extract, mixing until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture, stirring until just combined.
Add the Filling
  1. Gently fold in the fresh raspberries and white chocolate chips into the dough.
Bake the Cookies
  1. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  3. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
