Ingredients
  

For the Base
  • 4 slices whole grain bread
  • 2 tablespoons butter
For the Filling
  • 1 cup mozzarella cheese shredded
  • 1/2 cup feta cheese crumbled
  • 1/4 cup sun-dried tomatoes chopped
  • 1/4 cup black olives sliced
  • 1 teaspoon oregano dried

Method
 

  1. In a bowl, combine the mozzarella, feta, sun-dried tomatoes, black olives, and oregano. Mix well and set aside.
  2. Butter one side of each slice of whole grain bread.
  3. Place the unbuttered side of two slices of bread on a clean surface. Evenly distribute the cheese mixture on top of each.
  4. Top with the remaining slices of bread, buttered side facing out.
  5. Heat a skillet over medium heat. Add the sandwiches and cook for 3-4 minutes until golden brown.
  6. Carefully flip the sandwiches and cook for an additional 3-4 minutes until the other side is golden brown and the cheese is melted.
  7. Remove from the skillet, let cool slightly, then slice in half and serve warm.

Notes
