Ingredients
  

For the Base
  • 2 pounds russet potatoes peeled and cubed
  • 1/2 cup butter unsalted
  • 1/2 cup milk or cream
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
For the Topping
  • 1 cup cheddar cheese shredded
  • 1/2 cup bacon cooked and crumbled
  • 1/2 cup green onions sliced
  • 1/2 cup sour cream

Method
 

Prepare the Mashed Potatoes
  1. In a large pot, add the peeled and cubed russet potatoes and cover with water. Bring to a boil over high heat.
  2. Once boiling, reduce the heat and simmer for about 15-20 minutes, or until the potatoes are fork-tender.
  3. Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper, and mash until smooth and creamy.
