Prepare the Fries
- Preheat your oven to 425°F (220°C).
- Wash and cut the russet potatoes into fries. Pat them dry with a paper towel.
- In a large bowl, toss the potato fries with olive oil, salt, and black pepper until evenly coated.
- Spread the fries in a single layer on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 25 minutes, flipping halfway through, until golden and crispy.
Add Toppings
- Once the fries are done baking, remove them from the oven and sprinkle shredded cheddar cheese evenly over the hot fries.
- Add crumbled bacon on top of the cheese.
- Return the loaded fries to the oven for an additional 5 minutes, or until the cheese is melted.
- Remove from oven and top with sliced green onions and a drizzle of sour cream.
Serve
- Serve immediately while hot and enjoy your loaded cheesy fries!
