Lemon Poppy Seed Muffins

Ingredients
  

For the Muffins
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 1 cup buttermilk
  • 3 tablespoons lemon zest
  • 1 tablespoon poppy seeds
For the Glaze
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice

Method
 

Making the Muffins
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add the eggs one at a time to the butter mixture, mixing well after each addition.
  5. Stir in the buttermilk, lemon zest, and poppy seeds until well combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  7. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
Making the Glaze
  1. In a small bowl, whisk together the powdered sugar and lemon juice until smooth.
  2. Once the muffins are cool, drizzle the glaze over the top of each muffin.

Notes
