Lemon Asparagus Pasta

Ingredients
  

For the Pasta
  • 12 ounces spaghetti
  • 2 cups asparagus trimmed and cut into 2-inch pieces
  • 1 tablespoon olive oil for sautéing
  • 2 cloves garlic minced
  • 1 cup chicken broth or vegetable broth
  • 1 lemon juice and zest freshly squeezed
  • Salt to taste salt
  • Pepper to taste black pepper
For the Garnish
  • 1/4 cup parmesan cheese grated
  • 2 tablespoons fresh parsley chopped

Method
 

Cooking the Pasta
  1. Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
  2. In the same pot, add the olive oil and heat over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Preparing the Asparagus
  1. Add the asparagus pieces to the pot and sauté for about 3-4 minutes until tender but still crisp.
  2. Pour in the chicken broth and bring to a simmer. Stir in the lemon juice and zest, then season with salt and pepper to taste.
Combining Ingredients
  1. Add the cooked spaghetti to the pot with the asparagus and sauce. Toss everything together, adding reserved pasta water as needed to loosen the sauce.
  2. Remove from heat and stir in the grated parmesan cheese until melted and combined.
Serving
  1. Plate the pasta and garnish with fresh parsley and additional parmesan cheese if desired.
  2. Serve immediately and enjoy your Lemon Asparagus Pasta!

Notes
