Ingredients
  

For the Base
  • 4 cups powdered sugar
  • 1 cup cream cheese softened
  • 1 tablespoon butter softened
  • 1 teaspoon vanilla extract
  • 2 cups sweetened shredded coconut
For the Topping
  • 1 tablespoon ground cinnamon

Method
 

Prepare the Base
  1. In a large mixing bowl, combine the softened cream cheese and butter until smooth.
  2. Gradually add in the powdered sugar, mixing until fully incorporated.
  3. Stir in the vanilla extract and shredded coconut until well combined.
Shape the Candies
  1. Using your hands, scoop out about 1 tablespoon of the mixture and form it into a small potato shape.
  2. Repeat the process until all the mixture is shaped into 'potatoes'.
Coat with Cinnamon
  1. Place the ground cinnamon in a shallow dish.
  2. Roll each shaped candy in the cinnamon until fully coated.
Chill and Serve
  1. Arrange the candies on a serving platter.
  2. Refrigerate for at least 1 hour to firm up before serving.
