Ingredients
  

For the Chicken
  • 1 pound chicken breast boneless, skinless
  • 1 tablespoon honey
  • 2 tablespoons lime juice freshly squeezed
  • 1 teaspoon chipotle powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 tablespoon olive oil
For the Base
  • 2 cups brown rice cooked
  • 1 cup black beans canned, rinsed and drained
  • 1 cup corn canned or frozen, cooked
  • 1 cup salsa your choice
For the Toppings
  • 1 cup cherry tomatoes halved
  • 1 cup avocado diced
  • 1/2 cup cilantro chopped
  • 1/2 cup lime wedges for serving

Method
 

Marinate the Chicken
  1. In a bowl, combine honey, lime juice, chipotle powder, cumin, salt, and olive oil.
  2. Add chicken breasts to the marinade. Cover and refrigerate for at least 15 minutes.
Cook the Chicken
  1. Preheat a grill or skillet over medium-high heat.
  2. Remove chicken from marinade and cook for 6-7 minutes on each side or until fully cooked through (internal temperature of 165°F).
  3. Once cooked, let the chicken rest for 5 minutes before slicing.
Prepare the Base
  1. In four bowls, evenly distribute the cooked brown rice as the base.
  2. Top each bowl with black beans, corn, and salsa.
Assemble the Bowls
  1. Slice the rested chicken and place it on top of the rice mixture in each bowl.
  2. Add cherry tomatoes, diced avocado, and chopped cilantro as toppings.
Serve
  1. Garnish each bowl with lime wedges for squeezing over the top.
