Method
Prepare the Chicken
- Preheat the oven to 375°F (190°C).
- In a baking dish, drizzle olive oil and place the chicken breasts.
- Season the chicken with salt and pepper, then pour honey over the top.
- Scatter fresh cranberries around the chicken in the dish.
Prepare the Ricotta Topping
- In a bowl, mix together ricotta cheese, grated Parmesan, dried thyme, and chopped parsley until well combined.
- Spread the ricotta mixture evenly over the chicken and cranberries in the baking dish.
Bake the Dish
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the chicken is cooked through and the top is slightly golden.
Serve
- Remove from the oven and let it rest for 5 minutes.
- Serve warm, garnished with additional parsley if desired.
