Ingredients
  

For the Beef
  • 3 pounds beef chuck roast
  • 1 cup honey
  • 2 tablespoons chipotle peppers in adobo sauce minced
  • 1 tablespoon cumin
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
For the Tacos
  • 12 small corn tortillas
  • 2 cups shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 1 cup sour cream

Method
 

Cooking the Beef
  1. In a slow cooker, combine the beef chuck roast, honey, chipotle peppers, cumin, garlic powder, salt, and black pepper.
  2. Cover and cook on low for 8 hours, or until the beef is tender and easily shredded.
  3. Once cooked, remove the beef from the slow cooker and shred it using two forks.
  4. Return the shredded beef to the slow cooker and mix with the juices.
Assembling the Tacos
  1. Warm the corn tortillas in a skillet over medium heat until pliable.
  2. Add a generous portion of shredded beef to each tortilla.
  3. Top with shredded lettuce, diced tomatoes, shredded cheese, and a dollop of sour cream.
