Ingredients
  

For the Base
  • 1 pound ground turkey
  • 2 tablespoons olive oil divided
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Peppers
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 green bell pepper sliced
For Garnish
  • 1/4 cup fresh parsley chopped
  • 1 lime lime cut into wedges

Method
 

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the diced onion and sauté for 3-4 minutes until translucent.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the ground turkey to the skillet, breaking it up with a spatula. Cook until browned, about 5-7 minutes.
  5. Season the turkey with smoked paprika, salt, and black pepper.
  6. Add the sliced bell peppers to the skillet and stir well. Cook for another 5-7 minutes until the peppers are tender.
  7. Remove from heat and stir in the remaining tablespoon of olive oil.
  8. Serve hot, garnished with chopped parsley and lime wedges.
