German pancakes, also known as Dutch babies, are a delicious, fluffy breakfast dish that puffs up in the oven and can be topped with a variety of fruits and syrups.

Ingredients
  

For the Base
  • 1 cup all-purpose flour
  • 1 cup milk
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup unsalted butter melted
  • 1/4 teaspoon salt
For the Topping
  • 1 cup powdered sugar
  • 1 cup fresh berries such as blueberries or strawberries
  • 1/2 cup maple syrup

Method
 

Prepare the Oven and Batter
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine the flour, milk, eggs, vanilla extract, melted butter, and salt. Whisk until smooth and well combined.
Bake the Pancake
  1. Place a cast-iron skillet or oven-safe pan in the preheated oven for about 5 minutes.
  2. Carefully remove the hot pan from the oven and pour the batter into the pan. Bake for 15-20 minutes or until the pancake is puffed and golden brown.
Serve the Pancake
  1. Remove the pancake from the oven and let it cool for a minute.
  2. Dust the top with powdered sugar and top with fresh berries and maple syrup before slicing.
