Method
Prepare the Crust
- In a mixing bowl, combine the flour and salt. Add the cold butter and mix until the mixture resembles coarse crumbs.
- Gradually add cold water, stirring until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for 20 minutes.
Make the Filling
- In a large skillet, cook the shrimp over medium heat until pink and opaque, about 5 minutes. Remove from heat.
- In a separate bowl, whisk together the heavy cream, lemon juice, Old Bay seasoning, black pepper, and half of the green onions.
- Combine the cooked shrimp with the cream mixture and stir in the shredded cheddar cheese.
Assemble the Pie
- Preheat your oven to 375°F (190°C). Roll out the chilled dough on a floured surface and fit it into a pie pan.
- Pour the shrimp filling into the prepared crust, spreading it evenly.
Bake the Pie
- Bake the pie in the preheated oven for 30 minutes or until the crust is golden and the filling is set.
- Remove from the oven and let it cool for 10 minutes before slicing.
Serve
- Garnish with the remaining green onions and serve warm.
