Ingredients
  

For the Chicken
  • 2 cups chicken breast cooked and shredded
  • 1 cup panko breadcrumbs for crunch
  • 1 egg egg beaten
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
For the Sandwich
  • 8 slices sourdough bread or your choice of bread
  • 4 cups romaine lettuce chopped
  • 1 cup Caesar dressing
  • 1/2 cup parmesan cheese shredded

Method
 

Prepare the Chicken
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix the shredded chicken, paprika, and garlic powder together.
  3. Dip each piece of the chicken in the beaten egg and then coat with panko breadcrumbs.
  4. Place the breaded chicken on a baking sheet and bake for 15-20 minutes until golden brown and crispy.
Assemble the Sandwiches
  1. While the chicken is baking, toast the sourdough bread slices until golden.
  2. In a large bowl, combine the chopped romaine lettuce with Caesar dressing and toss well.
  3. Once the chicken is done, layer the lettuce mixture on the bottom slice of each bread.
  4. Top with crispy chicken, then sprinkle shredded parmesan cheese on top.
  5. Finish with the top slice of bread, cut in half, and serve immediately.

Notes
