- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the halved baby potatoes, olive oil, salt, and black pepper. Toss until the potatoes are well coated.
- Spread the potatoes in a single layer on a baking sheet, cut side down for extra crispiness.
- Roast in the preheated oven for 25-30 minutes, or until golden brown and crispy.
- While the potatoes are roasting, mix the minced garlic, lemon juice, and chopped parsley in a small bowl.
- Once the potatoes are done, remove them from the oven and immediately toss them with the garlic-lemon mixture.
- Serve hot, garnished with additional parsley if desired.
