For the Base
  • 2 pounds baby potatoes halved
  • 3 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
For the Topping
  • 1 cup feta cheese crumbled
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh parsley chopped

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the halved baby potatoes, olive oil, sea salt, and black pepper. Toss until the potatoes are well coated.
Roasting
  1. Spread the potatoes in a single layer on a baking sheet.
  2. Roast in the preheated oven for 30-35 minutes, or until golden brown and crispy, turning halfway through.
Finishing Touches
  1. Once the potatoes are crispy, remove them from the oven and immediately sprinkle with crumbled feta cheese, lemon juice, and lemon zest.
  2. Gently toss to combine, then garnish with freshly chopped parsley.
