Ingredients
  

For the Salmon Bites
  • 1 pound salmon fillets skin removed and cut into bite-sized pieces
  • 1 cup panko breadcrumbs for extra crispiness
  • 1 large egg beaten
  • 1/2 cup all-purpose flour for dredging
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Bang Bang Sauce
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha adjust to taste
  • 1 teaspoon lime juice
For Garnish
  • 2 tablespoons green onions sliced
  • 1 tablespoon sesame seeds

Method
 

Prepare the Salmon Bites
  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Set up a dredging station with flour, beaten egg, and panko breadcrumbs in separate bowls.
  3. Season the salmon pieces with salt and pepper, then coat each piece in flour, dip in egg, and finally coat with panko breadcrumbs.
  4. Arrange the coated salmon bites on the prepared baking sheet.
Bake the Salmon Bites
  1. Bake the salmon bites in the preheated oven for 12-15 minutes or until golden brown and cooked through.
  2. While the salmon is baking, prepare the Bang Bang sauce by mixing mayonnaise, sweet chili sauce, sriracha, and lime juice in a bowl.
Serve
  1. Once cooked, remove the salmon bites from the oven and let them cool slightly.
  2. Drizzle the Bang Bang sauce over the salmon bites or serve it on the side for dipping.
  3. Garnish with sliced green onions and sesame seeds before serving.

Notes

For extra crunch, you can fry the salmon bites instead of baking them. Adjust the spiciness of the sauce by adding more or less sriracha based on your preference.
