Ingredients
  

For the Scallops
  • 1 pound scallops fresh or thawed
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cloves garlic minced
For the Sauce
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese grated
  • 1 cup fresh spinach
  • 1/3 cup sun-dried tomatoes chopped
  • 1/2 teaspoon Italian seasoning
  • salt to taste
  • pepper to taste

Method
 

Cook the Scallops
  1. Heat the olive oil and butter in a large skillet over medium-high heat until hot.
  2. Season the scallops with salt and pepper, then add them to the skillet. Sear for about 2-3 minutes on each side until golden brown and cooked through.
Prepare the Sauce
  1. Remove the scallops from the skillet and set aside on a plate.
  2. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  3. Pour in the heavy cream, stirring to combine, then add parmesan cheese, spinach, sun-dried tomatoes, and Italian seasoning. Stir until the spinach wilts and the sauce thickens slightly.
Combine and Serve
  1. Return the scallops to the skillet, coating them in the creamy sauce. Cook for an additional 1-2 minutes until heated through.
  2. Serve warm, garnished with extra parmesan if desired.

Notes
