Ingredients
  

For the Base
  • 2 cups pumpkin puree
  • 2 medium apples peeled, cored, and chopped
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 4 cups vegetable broth
  • 1 cup coconut milk or heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon ground cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Topping
  • 1/4 cup pumpkin seeds toasted
  • 2 tablespoons fresh parsley chopped

Method
 

Prepare the Ingredients
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the chopped apples and onion with olive oil, cinnamon, nutmeg, salt, and pepper.
Roast the Apples and Onions
  1. Spread the apple and onion mixture on a baking sheet.
  2. Roast in the preheated oven for 25-30 minutes, until tender and lightly caramelized.
Combine Ingredients
  1. In a large pot, combine the roasted apples and onions with pumpkin puree and vegetable broth.
  2. Bring to a simmer over medium heat, then reduce heat and cook for an additional 10 minutes.
Blend the Soup
  1. Using an immersion blender, puree the soup until smooth. Alternatively, transfer to a blender in batches.
  2. Stir in the coconut milk and heat through, about 5 minutes.
Serve
  1. Ladle the soup into bowls.
  2. Garnish with toasted pumpkin seeds and chopped parsley before serving.
