Prepare the Chicken
- Season the chicken breasts with salt and black pepper on both sides.
- In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
Make the Sauce
- In the same skillet, add the sliced mushrooms and cook for about 5-6 minutes until they are browned and softened.
- Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Pour in the chicken broth and bring to a simmer. Let it reduce for about 3-4 minutes.
- Stir in the heavy cream and fresh thyme, and cook for another 5 minutes until the sauce thickens slightly.
Combine and Serve
- Return the cooked chicken breasts to the skillet, spooning the sauce over the top. Allow to simmer for an additional 2-3 minutes.
- Garnish with fresh parsley before serving.
