Ingredients
  

For the Pasta
  • 12 ounces spaghetti
  • 2 cups fresh spinach washed and stems removed
  • 1 tablespoon olive oil
  • 1 clove garlic minced
  • 1 cup ricotta cheese
  • 1 lemon zest and juice freshly grated
For the Topping
  • 1/4 cup toasted pine nuts
  • 1/4 cup parmesan cheese grated

Method
 

Cooking the Pasta
  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, about 8-10 minutes.
  2. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.
Preparing the Sauce
  1. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  2. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
Combining Ingredients
  1. Lower the heat and add the ricotta cheese, lemon juice, and lemon zest to the skillet. Stir to combine.
  2. Gradually add reserved pasta water, a little at a time, until the sauce reaches desired creaminess.
Final Assembly
  1. Add the drained spaghetti to the skillet and toss until the pasta is fully coated with the sauce.
  2. Season with salt and pepper to taste.
Serving
  1. Plate the pasta and sprinkle with toasted pine nuts and grated parmesan cheese.
