Ingredients
  

For the Potatoes
  • 2 pounds baby potatoes halved
  • 1 tablespoon olive oil for roasting
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
For the Creamy Garlic Sauce
  • 1 cup heavy cream
  • 4 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon parmesan cheese grated
  • 2 tablespoons fresh parsley chopped for garnish

Method
 

Prepare the Potatoes
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the halved baby potatoes with olive oil, salt, and black pepper until well coated.
  3. Spread the potatoes in a single layer on a baking sheet.
  4. Roast in the preheated oven for about 25 minutes, or until golden and tender, flipping halfway through.
Make the Creamy Garlic Sauce
  1. In a saucepan over medium heat, add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.
  2. Pour in the heavy cream and bring to a simmer.
  3. Stir in the dried thyme and grated parmesan cheese, and let it cook for another 3-5 minutes until slightly thickened.
Combine and Serve
  1. Once the potatoes are done roasting, remove them from the oven and place them in a serving dish.
  2. Pour the creamy garlic sauce over the roasted potatoes and gently toss to combine.
  3. Garnish with chopped fresh parsley before serving.
