Ingredients
  

For the Pasta
  • 12 ounces penne pasta
  • 2 tablespoons olive oil for sautéing
  • 3 cloves garlic minced
  • 1 cup chicken or vegetable broth
  • 8 ounces Boursin cheese any flavor
For the Garnish
  • 1/4 cup fresh parsley chopped
  • 1/4 cup parmesan cheese grated

Method
 

Cooking the Pasta
  1. Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente.
  2. Reserve 1 cup of pasta water, then drain the pasta and set aside.
Making the Sauce
  1. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  2. Pour in the chicken or vegetable broth and bring to a simmer.
  3. Add the Boursin cheese and stir until melted and creamy, about 2-3 minutes.
Combining Pasta and Sauce
  1. Add the cooked penne pasta to the skillet with the sauce, tossing to coat evenly.
  2. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
Serving
  1. Remove from heat and stir in chopped parsley and grated Parmesan cheese.
  2. Serve immediately, garnished with additional parsley and Parmesan if desired.

Notes
