For the Base
  • 2 cups all-purpose flour sifted
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 3 large eggs
  • 1/2 cup orange juice freshly squeezed
  • 1 tablespoon orange zest
  • 1 cup fresh cranberries chopped
For the Glaze
  • 1 cup powdered sugar
  • 2 tablespoons orange juice freshly squeezed
  • 1 teaspoon orange zest

Method
 

Preparation of the Cake
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. Add the softened butter and mix until crumbly. Then add the eggs, orange juice, and orange zest. Mix until smooth.
  4. Gently fold in the chopped cranberries into the batter.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
Preparation of the Glaze
  1. While the cake is baking, prepare the glaze by whisking together the powdered sugar, orange juice, and orange zest in a bowl until smooth.
  2. Once the cake is done, let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  3. Drizzle the orange glaze over the cooled cake before serving.
