Ingredients
  

For the Base
  • 1 can black beans rinsed and drained
  • 1 can sweet corn rinsed and drained
  • 1 cup cherry tomatoes halved
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1 small red onion diced
For the Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lime juice freshly squeezed
  • 1 teaspoon cumin
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 tablespoon cilantro chopped

Method
 

  1. In a large mixing bowl, combine the black beans, sweet corn, cherry tomatoes, red bell pepper, green bell pepper, and red onion.
  2. In a separate small bowl, whisk together the olive oil, lime juice, cumin, salt, and black pepper.
  3. Pour the dressing over the bean and vegetable mixture.
  4. Gently toss everything together until well combined.
  5. Taste and adjust seasoning if necessary, adding more salt or lime juice as desired.
  6. Let the mixture sit for at least 10 minutes to allow the flavors to meld.
  7. Serve with tortilla chips or as a topping for tacos.
