Ingredients
  

For the Base
  • 2 cups diced cooked potatoes preferably leftover
  • 1 cup corned beef shredded or diced
  • 1 medium onion finely chopped
  • 2 tablespoons vegetable oil for frying
For the Topping
  • 4 large eggs fried or poached

Method
 

Prepare the Base
  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the chopped onions and cook until they are translucent, about 5 minutes.
  3. Stir in the diced potatoes and corned beef. Cook, stirring occasionally, for about 15 minutes or until the potatoes are crispy and golden brown.
Cook the Eggs
  1. While the hash is cooking, fry or poach the eggs to your preference.
  2. Season the eggs with salt and pepper.
Serve
  1. Once the hash is cooked, divide it among plates.
  2. Top each serving with a fried or poached egg.
  3. Serve hot and enjoy!
