Method
Prepare the Churros Dough
- In a medium saucepan, combine water, sugar, and butter. Bring to a boil over medium heat.
- Once boiling, remove from heat and stir in flour and salt until well combined.
- Allow the mixture to cool slightly, then beat in the eggs one at a time until the dough is smooth.
Fry the Churros
- Heat oil in a deep fryer or large pot to 375°F (190°C).
- Transfer the churro dough to a piping bag fitted with a star tip.
- Pipe 4-6 inch long strips of dough into the hot oil, frying until golden brown on all sides, about 2-3 minutes per side.
- Remove churros with a slotted spoon and drain on paper towels.
Coat the Churros
- In a shallow dish, mix together the sugar and cinnamon.
- While the churros are still warm, roll them in the cinnamon-sugar mixture until fully coated.
Prepare the Chocolate Sauce
- In a small saucepan over medium heat, heat the heavy cream until it just begins to simmer.
- Remove from heat and add the chopped chocolate, stirring until melted and smooth.
Serve
- Serve the churros warm with the chocolate sauce for dipping.
