Ingredients
  

For the Base
  • 2 cups romaine lettuce chopped
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 1 cup red bell pepper diced
  • 1 cup red onion finely chopped
For the Topping
  • 1 cup feta cheese crumbled
  • 1/2 cup fresh parsley chopped
For the Dressing
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare the Vegetables
  1. Chop the romaine lettuce and place it in a large mixing bowl.
  2. Dice the cucumber, halve the cherry tomatoes, dice the red bell pepper, and finely chop the red onion. Add all the vegetables to the bowl with the lettuce.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper until well combined.
Combine the Salad
  1. Pour the dressing over the chopped vegetables in the mixing bowl.
  2. Toss the salad well to ensure all ingredients are coated with the dressing.
Add Toppings
  1. Sprinkle crumbled feta cheese and chopped parsley over the top of the salad.
Serve
  1. Divide the salad into serving bowls and enjoy immediately.
