Prepare the Chicken
- In a medium bowl, combine the shredded chicken with chipotle sauce. Mix well to coat the chicken evenly.
- Set aside to marinate for about 5 minutes while you prepare the bread.
Assemble the Melts
- Heat a skillet over medium heat and lightly butter one side of each slice of sourdough bread.
- On the unbuttered side of two slices, layer the chipotle chicken mixture, followed by the shredded cheese.
- Top with the remaining bread slices, buttered side facing out.
Cook the Melts
- Place the sandwiches in the heated skillet. Cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
- Remove from heat and let sit for a minute before slicing in half.
Prepare the Toppings
- While the melts are resting, slice the avocado and drizzle with lime juice to prevent browning.
- Chop fresh cilantro for garnish.
