Ingredients
  

For the Base
  • 2 cups cooked chicken, shredded preferably rotisserie
  • 2 tablespoons chipotle sauce adjust based on spice preference
  • 4 slices sourdough bread
  • 1 cup shredded cheese cheddar or Monterey Jack
For the Topping
  • 1 medium avocado sliced
  • 1 tablespoon fresh cilantro chopped, for garnish
  • 1 tablespoon lime juice freshly squeezed

Method
 

Prepare the Chicken
  1. In a medium bowl, combine the shredded chicken with chipotle sauce. Mix well to coat the chicken evenly.
  2. Set aside to marinate for about 5 minutes while you prepare the bread.
Assemble the Melts
  1. Heat a skillet over medium heat and lightly butter one side of each slice of sourdough bread.
  2. On the unbuttered side of two slices, layer the chipotle chicken mixture, followed by the shredded cheese.
  3. Top with the remaining bread slices, buttered side facing out.
Cook the Melts
  1. Place the sandwiches in the heated skillet. Cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
  2. Remove from heat and let sit for a minute before slicing in half.
Prepare the Toppings
  1. While the melts are resting, slice the avocado and drizzle with lime juice to prevent browning.
  2. Chop fresh cilantro for garnish.
Serve
  1. Plate the sandwiches and top with sliced avocado and a sprinkle of cilantro.
