- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrots, and celery; sauté for another 5 minutes until the vegetables begin to soften.
- Pour in the chicken broth and bring to a boil. Reduce the heat and let it simmer for about 10 minutes.
- Stir in the shredded chicken, pastina, dried thyme, salt, and black pepper. Cook for an additional 8-10 minutes, or until the pastina is tender.
- Taste and adjust seasoning if necessary. Remove from heat.
- Ladle the soup into bowls and top with fresh parsley and grated Parmesan cheese if desired.
