This Chicken Club Sandwich is a deliciously stacked meal featuring tender grilled chicken, crispy bacon, fresh lettuce, and ripe tomato, all layered between toasted bread.

Ingredients
  

For the Base
  • 4 slices whole grain bread toasted
  • 2 cups cooked chicken breast sliced
For the Topping
  • 4 slices bacon cooked until crispy
  • 1 cup romaine lettuce washed and dried
  • 1 medium tomato sliced
  • 1/2 cup mayonnaise for spreading

Method
 

  1. Cook the bacon in a skillet over medium heat until crispy. Remove and place on paper towels to drain excess fat.
  2. In the same skillet, grill the chicken breast slices for about 5-7 minutes on each side or until fully cooked.
  3. Toast the whole grain bread slices until golden brown.
  4. Spread mayonnaise on one side of each slice of toasted bread.
  5. Layer the grilled chicken on two slices of bread, followed by crispy bacon, romaine lettuce, and tomato slices.
  6. Top with the remaining slices of bread, mayonnaise side down, to create the sandwich.
  7. Cut the sandwiches in half and serve immediately.
