Ingredients
  

For the Base
  • 1 cup uncooked white rice rinsed
  • 2 cups chicken broth
  • 1 pound boneless chicken breasts cut into bite-sized pieces
  • 2 cups zucchini sliced
  • 1 small onion diced
  • 2 cloves garlic minced
For the Topping
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon dried Italian herbs or to taste

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the uncooked white rice, chicken broth, diced chicken, sliced zucchini, diced onion, and minced garlic. Stir until well mixed.
  3. Transfer the mixture into a greased 9x13 inch baking dish, spreading it evenly.
  4. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  5. Remove the foil, stir the mixture gently, and top with shredded cheddar and mozzarella cheese evenly over the top.
  6. Return the dish to the oven and bake uncovered for an additional 15 minutes, or until the cheese is melted and bubbly.
  7. Once done, remove from the oven and let it cool for a few minutes before serving. Sprinkle with dried Italian herbs if desired.
