Preparation
- Preheat your oven to 350°F (175°C).
- In a large pot, combine the vegetable broth and uncooked rice. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender.
Mixing the Base
- In a large mixing bowl, combine the steamed broccoli, cooked rice, cream of mushroom soup, and 1 cup of shredded cheddar cheese. Mix until well combined.
- Transfer the mixture into a greased 9x13 inch baking dish, spreading it evenly.
Topping
- In a small bowl, mix together the remaining 1 cup of shredded cheddar cheese and bread crumbs.
- Sprinkle the cheese and bread crumb mixture evenly over the casserole.
Baking
- Place the casserole in the preheated oven and bake for 30 minutes or until the top is golden and bubbly.
- Remove from oven and let it cool for a few minutes before serving.
