Ingredients
  

For the Base
  • 2 cups broccoli florets steamed
  • 1 cup uncooked rice white or brown
  • 2 cups vegetable broth
  • 1 cup cheddar cheese shredded
  • 1 cup cream of mushroom soup
For the Topping
  • 1 cup cheddar cheese shredded
  • 1/2 cup bread crumbs

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, combine the vegetable broth and uncooked rice. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender.
Mixing the Base
  1. In a large mixing bowl, combine the steamed broccoli, cooked rice, cream of mushroom soup, and 1 cup of shredded cheddar cheese. Mix until well combined.
  2. Transfer the mixture into a greased 9x13 inch baking dish, spreading it evenly.
Topping
  1. In a small bowl, mix together the remaining 1 cup of shredded cheddar cheese and bread crumbs.
  2. Sprinkle the cheese and bread crumb mixture evenly over the casserole.
Baking
  1. Place the casserole in the preheated oven and bake for 30 minutes or until the top is golden and bubbly.
  2. Remove from oven and let it cool for a few minutes before serving.
