Ingredients
  

For the Base
  • 2 tablespoons butter unsalted
  • 2 tablespoons all-purpose flour for thickening
  • 1 cup milk whole milk recommended
  • 1 cup cheddar cheese shredded
For the Topping
  • 1/4 teaspoon paprika for garnish
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Cheese Sauce
  1. In a medium saucepan, melt the butter over medium heat.
  2. Once melted, whisk in the flour and cook for about 1 minute to form a roux.
  3. Gradually add the milk while continuously whisking to avoid lumps.
  4. Continue to cook, stirring frequently, until the mixture thickens, about 5 minutes.
  5. Reduce heat to low and stir in the shredded cheddar cheese until fully melted.
Serve the Cheese Sauce
  1. Remove the cheese sauce from heat and season with paprika and black pepper.
  2. Pour the cheese sauce over freshly cooked fries and serve immediately.
