Carrot Cake Cookies

Deliciously soft and chewy cookies bursting with the flavor of carrot cake, topped with a creamy frosting.

Ingredients
  

For the Base
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups grated carrots
  • 1/2 cup chopped walnuts optional
For the Frosting
  • 8 ounces cream cheese softened
  • 1/4 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Prepare the Cookies
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream together the brown sugar, granulated sugar, and softened butter until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the grated carrots and walnuts (if using).
  7. Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Prepare the Frosting
  1. In a medium bowl, beat together the softened cream cheese and butter until smooth.
  2. Gradually add the powdered sugar, mixing until creamy and well combined.
  3. Stir in the vanilla extract until fully incorporated.
  4. Once the cookies are completely cooled, spread a generous amount of frosting on top of each cookie.

Notes
