Prepare the Filling
- In a medium bowl, combine the diced apples, brown sugar, cinnamon, lemon juice, and caramel sauce. Mix well until apples are fully coated.
- Let the filling sit for about 10 minutes to allow the flavors to meld.
Assemble the Taquitos
- Place a tortilla on a clean surface and add about 2-3 tablespoons of the apple filling in a line across the center.
- Roll the tortilla tightly around the filling, then secure it with a toothpick if necessary. Repeat with remaining tortillas and filling.
Fry the Taquitos
- In a large skillet, heat the vegetable oil over medium-high heat until hot.
- Carefully add the taquitos to the oil, seam side down, and fry for about 2-3 minutes on each side, or until golden brown and crispy.
- Remove the taquitos from the oil and drain on paper towels.
Serve
- Dust the taquitos with powdered sugar while still warm.
- Serve with extra caramel sauce for dipping, if desired.
