Ingredients
  

For the Filling
  • 3 medium apples peeled, cored, and diced
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1/4 cup caramel sauce
For the Taquitos
  • 8 large flour tortillas
  • 1 cup vegetable oil for frying
  • 1/2 cup powdered sugar for dusting

Method
 

Prepare the Filling
  1. In a medium bowl, combine the diced apples, brown sugar, cinnamon, lemon juice, and caramel sauce. Mix well until apples are fully coated.
  2. Let the filling sit for about 10 minutes to allow the flavors to meld.
Assemble the Taquitos
  1. Place a tortilla on a clean surface and add about 2-3 tablespoons of the apple filling in a line across the center.
  2. Roll the tortilla tightly around the filling, then secure it with a toothpick if necessary. Repeat with remaining tortillas and filling.
Fry the Taquitos
  1. In a large skillet, heat the vegetable oil over medium-high heat until hot.
  2. Carefully add the taquitos to the oil, seam side down, and fry for about 2-3 minutes on each side, or until golden brown and crispy.
  3. Remove the taquitos from the oil and drain on paper towels.
Serve
  1. Dust the taquitos with powdered sugar while still warm.
  2. Serve with extra caramel sauce for dipping, if desired.
