Ingredients
  

For the Base
  • 8 ounces egg noodles
  • 3 cups vegetable broth
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
For the Topping
  • 1 cup mixed vegetables frozen or fresh
  • 1 cup cooked chicken breast shredded or cubed
  • 2 tablespoons green onions sliced

Method
 

Prepare the Noodles
  1. Bring a large pot of water to a boil. Add the egg noodles and cook according to package instructions until al dente, about 7-8 minutes.
  2. Drain the noodles and set aside. Do not rinse.
Make the Broth
  1. In a large saucepan, combine the vegetable broth, soy sauce, and garlic powder. Bring to a simmer over medium heat.
  2. Let the broth simmer for about 5 minutes to combine the flavors.
Combine Ingredients
  1. Add the cooked egg noodles to the broth and stir gently to combine.
  2. Add the mixed vegetables and cooked chicken to the pot, stirring until everything is heated through, about 3-4 minutes.
Serve
  1. Ladle the noodles and broth into bowls.
  2. Garnish with sliced green onions before serving.
