Ingredients
  

For the Base
  • 2 cups bran flakes
  • 1 cup buttermilk
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 1 large egg
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
For the Add-ins
  • 1/2 cup raisins
  • 1/2 cup walnuts chopped

Method
 

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, combine bran flakes and buttermilk. Let it sit for about 10 minutes to soften the flakes.
  3. Add brown sugar, honey, and the egg to the bran mixture and mix well.
  4. In a separate bowl, whisk together whole wheat flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the raisins and chopped walnuts.
  7. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool slightly before serving.

Notes

For added flavor, you can substitute some of the buttermilk with applesauce. These muffins can be stored in an airtight container for up to 3 days.
