Blueberry Cottage Cheese Muffins

Ingredients
  

For the Base
  • 1 cup cottage cheese preferably low-fat
  • 1 cup milk any type
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
For the Topping
  • 1 cup fresh blueberries you can also use frozen

Method
 

Prepare the Muffin Batter
  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, combine the cottage cheese, milk, eggs, and vanilla extract.
  3. In another bowl, whisk together the flour, sugar, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
Add the Blueberries
  1. Gently fold in the fresh blueberries into the muffin batter.
Bake the Muffins
  1. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  2. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve
  1. Remove the muffins from the oven and let them cool in the pan for 5 minutes.
  2. Transfer the muffins to a wire rack to cool completely before serving.

Notes
