Prepare the Cake Base
- Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the milk and vanilla extract.
- In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Prepare the Filling
- In another bowl, toss the diced apples with brown sugar and cinnamon until well coated.
Assemble the Cake
- Pour half of the cake batter into the prepared baking dish, spreading it evenly.
- Layer the apple mixture over the batter, followed by the remaining cake batter spread on top.
Prepare the Topping
- In a bowl, combine the flour, granulated sugar, melted butter, and cinnamon. Mix until crumbly.
- Sprinkle the crumb topping evenly over the cake batter in the baking dish.
Bake the Cake
- Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes
For extra flavor, consider adding nuts to the crumb topping or drizzling the cake with a simple glaze after baking.
